3/4 cup unsalted butter, softened
1 cups Sugar
1 whole Egg
1 Egg Yolk
1 Tbsp vanilla extract
2 cups All-purpose Flour
1/2 teaspoon Salt
1/2 teaspoon Baking Powder
1 pkg.(8 oz.) Cream Cheese, softened
1/4 cup sugar
1/2 tsp. vanilla
assorted fresh fruit, for topping
For the cookies: Place the butter and sugar in the bowl of a stand mixer and beat until well combined, about 2 minutes. Add in the eggs, yolks and vanilla and mix until combined.
In a separate bowl, sift together the flour, salt, and baking powder. Slowly add flour to the butter mixture and mix until combined. Do not overmix. Transfer the dough to saran wrap and wrap well. Refrigerate for at least one hour.
When you are ready to bake, pre-heat the oven to 350 degrees. Roll the dough out to 1/2 inch thickness, cut out cookies, and place on a parchment lined baking sheet. Bake for 9-10 minutes or until cookies are set and just starting to brown around the edges.
For the topping: Beat cream cheese, sugar and vanilla with mixer until well blended. Spread over cookies and top with fresh fruit.
